Lotus root or renkon in Japanese is one of the vegetable roots often used in Japanese diets. Renkon has many benefits to human health reduce blood cholesterol, sugar, body weight, constipation, develop resistance against viral infections, boost immunity and scavenge cancer.
Lotus root are available in a fresh or packed condition. You can find renkon in any Japanese supermarket.
There are several ways to cook renkon such as tempura, kinpira or chips.
Today we will share the renkon kinpira recipe.
200 gram cut lotus root
1 tsp vinegar
1 tbsp sesame oil
1 tsp sugar
2 tbsp soy sauce
1 tsp sugar
1/2 tbsp sweet mirin (you can substitute this with adding more sugar)
1 dried chopped chilli
A pinch of sesame seed (optional)
Instructions:
- Heat the sesame oil in a pan
- Stir fry lotus root
- Add soy sauce, sugar, mirin (optional).
- Simmer for 3 minutes.
- Add the chilli once the liquid turn into sticky sauce.
- Sprinkle sesame seeds over lotus roots.
